Serves 4.
- 1 cup quinoa, rinsed, cooked in 2 cups water for 15 minutes
- 1 can chickpeas, drained, tossed with 1 tbsp olive oil, 1 tsp smoked paprika and a pinch of salt, roasted at 425°F for 20 minutes
- 1 sweet potato, cubed, roasted on the same tray
- 2 big handfuls of kale, massaged with a squeeze of lemon
- Dressing: 3 tbsp tahini, juice of 1 lemon, 1 small grated garlic clove, water to thin
Divide everything among four bowls, drizzle with dressing and finish with sesame seeds. Choose organic produce when you can, especially for leafy greens.
A note for the household: this bowl contains garlic. Delicious for you, unsafe for your cat. Keep it on your side of the table.
